El Pisco

Al ritmo de la saca
el estado resurrecto
de miles de racimos,
corre desbocado
por calurosos alambiques,
alimentados por el fuego
sempiterno del huarango,
hierve la cachina
y sus mágicos efluvios
en extraña destilación, dan vida al chicharrón,
calientito y vaporoso
trepador y juguetón;
flamante Pisco puro
que levanta el espíritu
Y alegra el corazón.
The Pisco

At the beat of taking off
the resurrected condition
of thousands of grape clusters,
unleashed runs
by hot stills,
fueled by the everlasting
fire of huarango*,
the cachina* boils
and its magical emanations
in strange distillation,
gives life to pork cracklings,
warm and steamy
climbing and playful;
brand new pure Pisco
that lifts the spirit
and gladdens the heart.

*Huarango: Prosopis pallid is a species of mesquite tree.
*Cachina (from the quechua kachinaq) is a popular peruvian beverage from the valleys of Mala, Cañete, Chincha, Pisco and Ica.
